Best Corned Duck Reuben Sandwich

Hunting ducks is without a doubt my favorite hunting pursuit. I have spent countless hours in the field hunting waterfowl. It's the reason I found a passion for learning how to cook wild game. It all started when I was 14 years old, hunting out of an old Alumacraft fishing boat with my father. Neither of us had any idea what we were doing. We had a dozen decoys we picked up at the fleet store along with some old camo jackets and hiking boots on. We stuck out like a sore thumb and never had a duck even come close to us all morning. But I did manage to shoot a coot with a bolt-action 20 gauge. Hehe, I mean we literally had no idea what we were doing. We brought that coot home and my dad breasted out the meat and we fried it in a pan for breakfast. My first bite was so awful I spit it out. I never wanted to eat duck again. Well, of course, over the years I picked up some tips on duck hunting and we started to shoot more birds. I loved hunting the ducks but what do I do with the meat? So the adventure began trying to take the thing most hunters hate eating and make it something I could love eating so I had a reason to go shoot more. And this recipe with corned duck is a result of that journey. I now corn my diver ducks with it and without a doubt, it's some of the most delicious duck meat you will taste on earth. Duck Ruben sandwich


Reuben sandwich is basic and can be done many ways but the real kicker is the meat and you can't go wrong with corned duck. Full of flavor and tender. Man, it makes me salivate just thinking of it.


Start with rye bread.

Toss on some Thousand Island dressing

Sauerkraut

Swiss cheese

And then the corned duck.

Butter both sides of your rye bread and then fry it.

I use the griddle for this so I can make a lot up at once. Everyone loves these so it's great to have more than enough. That way I can bring them to work and pull them out for lunch and watch my coworkers ooh and awe over them.

Eat leftovers cold or warm them up. Either way, this is one way to use corned duck that you cannot go wrong with.
